Blackberry Collins

Intro

There’s not too much that needs to be said for this cocktail.  It’s a mix between a Tom Collins (normally gin, simple syrup, lemon juice, topped with soda water and garnishes) and a Bramble (normally gin, crème de mure, lemon juice, simple syrup).  It’s a really refreshing and easy-to-make cocktail and as you can probably tell by now, I love using fresh fruit in my drinks with very little added sugar and this cocktail is no different.  I used blackberries since it was mid-summer when I made this drink for my friends but as we slowly fall into winter, you can even use blackberry jam if fresh, ripe berries are hard for you to find.

Couple more notes:

  • The vermouth bianco in this recipe is kind of optional, although I find it adds an interesting herbaceousness to the drink; if you don’t use, I would add more lime juice and/or zest to balance the drink a bit more

  • If you use blackberry jam, I would also add more lime juice and/or zest since jam is a lot sweeter than fresh berries

For each cocktail:

  • 6 - 7 fresh blackberries

  • 1 TBSP cane sugar (or ¾ oz simple syrup)

  • 1 lime wedge-worth juice

  • 2 oz gin (I use Mahon brand)

  • ½ oz vermouth bianco (I use Bordiga brand)

  • Club soda

Garnish: Lime wedge and blackberry skewered

For each cocktail:

  1. Add the fresh blackberries into a highball or Collins glass with the cane sugar and lime juice; muddle 

  2. Add the gin and Dolin Blanc/Vermouth Bianco and stir well; add fresh ice and stir to combine again

  3. Top with club soda and add garnish
